Coca-Cola Barbeque Chicken

Three ingredients — chicken, ketchup, and a bottle of Coke — simmered down into a sticky, sweet-tangy glaze. A retro favorite that's almost too easy.

Ingredients

It's a braise that turns into a glaze. The cola's sugar and the ketchup cook down together into a sticky sauce — so keep it at a gentle simmer, then uncover at the end to let it reduce. Use regular Coke (you need the sugar), and cook dark pieces through to about 175°F.

Easier, if you like

  • Deepen the flavor with a splash (¼ cup) of your favorite bottled barbecue sauce stirred into the ketchup and Coke.
  • Oven route: arrange in a baking dish, pour the sauce over, cover, and bake at 350°F about 45 minutes, uncovering at the end to glaze.

    Why cola works: it's sugar, acid, and a little caramel color, so it both tenderizes the chicken and reduces into a glossy barbecue-style glaze. A classic three-ingredient party trick.

    Regular cola only — diet versions have no sugar to cook down into a glaze.

    Doneness: dark meat (thighs, legs) is juiciest around 175°F; see the Kitchen Notes on chicken doneness for the why.

    Serve over rice to catch the sauce, with a simple slaw alongside.

    Gluten-free: most ketchup and cola are gluten-free — check the labels and the chicken is naturally GF.

    Boneless pieces: boneless thighs or breasts work too; cut the simmer to about 20–25 minutes so they don't dry out.
